Since their inaugural 2007 vintage, Kivelstadt Cellars strives to create wines of intrigue that maintain a fun and approachable style, challenging the status quo. Dedicated to their simple goal of keeping some of California’s most historic vineyards in the ground, Kivelstadt Cellars discovered Oat Valley vineyard and offered to pay the growers more than market rates for the grapes. Oat Valley is farmed by fourth generation Cooley family members, going back 150 years. This organic, dry farmed Carignane is from the oldest planting in the state of California, planted in 1877.
Kivelstadt Cellars’ believe that Carignane is an elegant grape and they work hard to showcase the varietal in their winemaking. Winemaker Sam Baron’s passion for restrained and elegant wines, organic and sustainable farming and his thirst for exploring unique vineyards truly shines with this lot. They pick early at ~22.5 brix to keep the alcohol low and the acids high. With only one pump over each day, they ferment at low temperatures, peak of ~82F.
This Carignane offers bright blueberry flavors with subtle tannins and mouth-watering acidity. This light red wine pairs exceptionally with fish and will show guests what terroir looks like with minimalist winemaking.
