Lot #28 Ferrari-Carano Vineyards and Winery

Ferrari-Carano has never created a blend of the three Cabernet Sauvignon blocks that are selected for their PreVail Wines – West Face, Lookout Tree, and Back Forty. “PreVail Trio” is the first wine to represent all three wines in one bottling. These are all hillside vineyard blocks ranging in elevation from 500 to 1200 feet.

Don and Rhonda Carano, natives of Reno, Nevada, and second generation Italian-Americans, founded Ferrari-Carano in 1981. The first wines released were a 1986 Fumé Blanc and a 1985 Alexander Valley Chardonnay. Owned by Bill and Carol Foley since 2020, Ferrari-Carano still produces Fumé Blanc and Chardonnay as well as over 20 other white and red wines. Ferrari-Carano’s 21 vineyards and winery have earned California Sustainable Winegrowing Alliance (CSWA) certification, becoming a Certified California Sustainable Vineyard for their numerous efforts to preserve the land for future generations while producing memorable, sustainable wines of outstanding quality.

The grapes for “PreVail Trio” were destemmed and berry sorted through an optical sorter, then transferred to stainless steel tanks for five days of cold soaking. Then yeast was added and pump-overs commenced, one to two times daily, for the duration of primary fermentation. The wine was then drained to French oak barrels for malolactic fermentation and cave aging before bottling. Expect flavors of ripe, dried currants, thyme, leather, graham cracker, and spiced plums with plush, velvety tannins and a long finish.
